Looking for some healthy Chinese vegetable recipes? Vegetable is one of the cheap and healthy foods that we should not miss in our daily diet. They contain much nutrients and fiber that are beneficial to our bodies.
Vegetables need to be cleaned carefully so as to get rid of as much dirt and pesticide, but not the healthy vitamins and minerals, before we start to cook them. There are many ways to cook vegetables, including stir frying, boiling, steaming, blanching, and adding them in as part of the ingredients in other dishes. Our favourite is stir fry vegetables. When stir frying, we usually saute some garlic to flavour the oil before adding the vegetables. If you are cooking leafy vegetables, stir fry the harder stems first before stir frying the leaves so that they are more evenly cooked. We like to add ingredients like dried prawns and ikan bilis to our stir fry recipes to enhance the flavour and colour of the dishes. Seasonings like salt or oyster sauce is added towards the end of the cooking for taste. We also like to cook vegetable soups. Hard root vegetables like carrots and corns are cooked longer to soften them. However, soft vegetables like Cai Xin cannot be cooked too long to minimise destroying the good nutrients inside them.
