Stir Fry Recipe for Pea Sprouts

This is a quick and easy vegetable stir fry recipe. Ready in 5 minutes, you can taste the tender Pea Sprouts without the hard-to-chew stems.

Pea Sprouts Vegetable Stir Fry Recipe Pea Sprouts are pretty expensive vegetables which can be found in Chinese restaurant menus.

They are also called Dou Miao, Pea Shoots or Snow Pea Shoots.

Similar to Bean Sprouts, you will need some time and patience to inspect each and every sprout and pluck away unwanted parts before cooking.

For Pea Sprouts, you need to pluck away the hard-to-chew stems and damaged/rotten parts so that you can taste the delicious vegetables without the excessive fibre. The time spent will be worth-while if your family or friends love this dish.

We prefer to use the dark green, thicker stem and more leafy type of Pea Sprouts as shown in the dish below. Some Pea Sprouts are thinner with smaller leaves, so you will eat more stems than leaves.

We did not add any other ingredients to the recipe as the Pea Sprouts are tasty enough with just a bit of seasoning. This way, you can enjoy the tender vegetables better without any "interference", except for food from other dishes : )

Cooking Ingredients
(serve 5 to 6):

500g Pea Sprouts
2 tablespoon cooking oil
3 gloves garlic, chopped
1.5 cup water
1 teaspoon Oyster sauce to taste

Cooking Instruction for this Easy Vegetable Stir Fry Recipe:

Remove the hard-to-chew stems (the lower portions that are more difficult to chew) and any damaged/rotten parts from the pea sprouts. Wash 3 times, drain and air dry for a while before cooking.

Heat a wok on high fire. When hot, add oil and heat. Saute garlic till fragrant.

Add pea sprouts and stir fry vegetables till they are evenly wilted.

Add water, pouring down around the side of the wok so that the water can get heated more easily. Stir a few times till the water boils.

Spread the vegetables out evenly on the wok. Lower to medium fire and cover the wok to simmer the vegetables for about 1 minute.

Add about 1 teaspoon of Oyster sauce to taste. Stir fry for a while more till the vegetables are evenly seasoned.

Serve hot.
