If you have someone who does not like to eat steamed fish at home, do try out this tasty recipe for fish.

Steamed Fish Recipe for Grouper Ingredients:
1 grouper fish (Shi Ban Yu), about 700g
Salt (for marinating)
4 stalks spring onion
4cm ginger, peeled
1 tablespoon rice wine
1 big red chilli
3 tablespoons olive oil

Dark Sauce Ingredients:
2 tablespoons light soy sauce
1 tablespoon oyster sauce
1 tablespoon sugar
Few dashes of white pepper powder
125ml water

Cooking Instruction:

Clean and marinate the grouper fish with salt for one hour. Wash away the salt thereafter. Make 2 cuts on each side of the fish body.

Place the grouper on a steaming plate, with 1 or 2 chopstick(s) below the fish to allow steam to pass through and cook the bottom portion faster.

Cut two stalks of spring onion into sections and smash them with the flat side of a chopper. Slice about 2cm of ginger. Place all of them evenly on top of the fish, then pour 1 tablespoon of rice wine over.

Steam on high heat for about 15 minutes. To check whether cooked, poke with a chopstick. It should go through to the bone easily.

Remove the steamed fish onto a serving plate. Discard the spring onion, ginger and liquid left over after steaming.

Shred two stalks of spring onion, 2cm of ginger and one big red chilli. Scatter them on top of the fish.

Boil 3 tablespoons of olive oil and pour it over the garnishing.

Bring the dark sauce ingredients to boil and pour it all over the fish.

Serve hot.

Tip:

You can also use red grouper fish or other types of white fish as long as they are fresh and do not smell fishy.
