Recipe for Kids & Adults - Macaroni in Ikan Bilis Soup
Soft and easy to chew and digest, macaroni soup is a light and non-oily recipe for kids and adults. We have added fish balls to this recipe as it is well liked by kids, including my son.
Be careful though, when feeding young kids with fish balls to prevent choking. We usually use a pair of scissors to make one or two cuts on the fish balls to open them up partially so that they still look like fish balls to the children. This way, they are easier to cook and eat. They are also easier to cut using spoon if you are still feeding your kid yourself. Other than being a healthy recipe for kids, macaroni soup is enjoyed by people of all ages, including elderly people on soft diet. This is also one of the foods suitable for people who are not well and cannot eat hard food. You may use other ingredients for this macaroni recipe according to your preference (e.g. sliced fish cake, meat balls, lettuce or other leafy vegetables). Food Ingredients, serve 2 - 3: 150g shell-shape macaroni 100g ikan bilis 1 carrot 10 fish balls 100g minced pork Water Light soy sauce to taste Spring onion for garnishing
Marinade for minced pork: 1/2 tbsp light soy sauce Few dashes sesame oil Few dashes white pepper 1/2 tsp corn flour
Directions to make this healthy recipe for kids and adults:
1. Rinse Ikan Bilis and add to pot with 15 cups of water. Wash, peel and cut carrot into chunks. Add carrot to water. Bring all to boil, then lower heat and simmer for 30 to 45 minutes to bring out the sweetness of the ikan bilis and carrots. 2. Boil 5 cups of water in another pot. Pour macaroni into the boiling water and cook till they become big and soft (takes about 20 minutes). 3. Drain away the hot water (using strainer or metal sieve) and cool the macaroni using cold water (either in a big bowl of cold water or under cold running water if you are using a metal sieve with handles). Drain off the water and set aside. 4. While cooking the soup and macaroni, marinate the minced pork with above marinade for at least 15 minutes. Add corn flour last to seal in the flavour after you have mixed the minced pork with the other marinade ingredients. 5. Rinse and make 1 to 2 cuts on the fish balls using scissors. Wash and chop the spring onion. Set aside. 6. When the soup is ready, pour the soup and carrot into a clean pot and boil on high fire (we usually do not eat the ikan bilis as they are now tasteless). 7. Add the cooled macaroni and cut fish balls into the soup. Use a teaspoon and scoop the marinated pork into the soup spoon by spoon so that they do not form big lumps of meat. 8. Bring all to boil and stir. The ingredients are cooked when the fish balls float on the soup and the pork turn white. Taste soup and add soy sauce to taste, if necessary. 9. Serve in bowls and garnish with chopped spring onion. 10. If preferred, serve with a saucer of light soy sauce (and chopped red chilli) as some people like to dip the meat and fish balls in the sauce to improve their appetite.
