Lotus Seeds
Lotus seeds are called "Lian Zi" in mandarin. They come from lotus plants and can be used when cooking soups, desserts, congee, etc. They are usually sold in dried form rather than fresh form.

The dried seeds are very hard and you will need to soak them overnight before you cook them. If you wish to use them faster, soak them in hot water, split them open, remove the shoots and then rinse them in hot water before cooking. You can also steam to soften them before cooking. When cooking, add them into the cooking process early as they are hard and take longer to soften. For boiling/ brewing, add them in only after the water has boiled.
