Green Bean Soup Recipe

Green bean soup is a dessert which we can find easily in dessert stalls at food courts, hawker centres or dessert shops.

Green Bean Soup This dessert soup is said to be cooling to the body. As such, it is pretty popular in Singapore due to our hot climate.

The dessert is also very easy to cook as we can simply rinse the beans and pandan leaves without having to peel or chop anything.

If you prefer to drink more soup, you can add more water.

If you like small sago pearls, you can add them in for a fuller taste.

Cooking Ingredients (serve 3 - 4):
130g green beans (also called mung beans)
3 pandan leaves
4 cups water
3 tablespoon sugar (or some rock sugar) to taste

Cooking Direction for this Easy Green Bean Recipe:

Wash pandan leaves and tie in a knot.

Add pandan leaves and 4 cups of water into a pot and bring to boil.

Rinse green beans a few times to get rid of floating particles and bad beans.

Pour green beans into the water when it has boiled.

Bring to boil again, then lower heat and simmer for about 30 minutes until the beans soften and break open. Test softness to your liking and cook longer if necessary.

Add sugar to taste. Adjust the sweetness to your preference too.

Serve warm or cool.
