White Fungus is also known as White tree ear fungus, Bai Mu Er, Snow fungus, Xue Er, Silver fungus, Silver ear, Silver tree ear fungus, Yin Er and many more.

White fungus helps to enhance body fluid and is believed to improve skin complexion if consumed frequently. It is said to be similar to bird nests, but is much more affordable.

dried white fungus

Good quality dried white fungus are yellowish in colour. We prefer to use the less expensive "scattered" type of white fungus to cook dessert (e.g. White fungus, Gingko nuts and Longan Dessert Soup). They taste softer and nicer than the big sponge-like ones.

soaked and cleaned white fungus

The yellowish dried white fungus will turn pale yellow/white and almost translucent after you soak them in water. They will also expand to a few times their original size. Thus, take care not to soak too much in the beginning if you are not sure.

Rinse them a few times to remove all dirt particles, discoloured parts and hard stems. Tear them into smaller pieces as you clean them so that they are easier to chew when ready.
