Chye Sim Soup

Easy Healthy Recipe - Chye Sim Soup Want an easy healthy recipe that provides you with the nutrition of vegetable without having to stir fry them?

This is an easy Chye Sim (also called Cai Xin or Choy Sum) soup recipe that even teenagers can cook.

Just be careful not to be scalded by the hot soup when discarding the ikan bilis.

You get both vegetables and soup in one dish.

For this vegetable soup recipe, we are using the big leaves, long stem type of Chye Sim.

Cooking Ingredients (serve 2 - 3):
250g Chye Sim vegetables
60g Ikan bilis
8 cups water

Cooking Direction:
1. Wash Chye Sim vegetables and cut into chewable length (about 2 inch long).

2. Add 8 cups of water and rinsed ikan bilis into a pot and bring to boil. Lower heat and simmer for 30 minutes. 3. When the soup is ready, discard the ikan bilis. (You can use a sieve to scoop out the ikan bilis. Alternatively, pour the soup into another pot to get clearer soup.)

4. Add Chye Sim and boil for a few minutes, stirring a few times to cook the vegetables evenly.

5. Taste and season with soy sauce or salt only if necessary as ikan bilis are salty.

6. Serve hot.

Tips:
a. If you prefer, you can add some marinated minced pork, fish balls or prawns into the vegetable soup. For minced pork, you can marinate them with light soy sauce, sesame oil, white pepper and corn flour.

b. Instead of ikan bilis, you can also use pork ribs or chicken thigh to make the soup base.
