Easy Cooking Chicken and Seafood Macaroni Recipe
Macaroni soup is one of the easy cooking dishes that my Mother-in-Law likes to make for lunch. It is easy to digest and yet nutritious with all the ingredients in it.
This easy cooking recipe does not need much skill to complete. You can make it whether you are cooking for one or many people. Simply reduce the amount of ingredients accordingly.Macaroni soup is also one of the foods that our stomach can still take when we are unwell and have no appetite. Cooking Ingredients (serve 2 - 3): 150g macaroni 1 chicken thigh, about 300g 10 fish balls 10 prawns Water Light soy sauce to taste Few stalks of Chinese parsley for garnishing
Cooking Procedure for this Macaroni Recipe:
1. Rinse the chicken thigh and remove excessive fat. De-shell and de-vein the prawns, leaving only the tail shells on the prawns. Rinse the prawns and fish balls. Wash and chop the parsley. Set aside. 2. Place chicken thigh and 10 cups of water in a large pot and bring to boil. Boil for about 5 minutes, then lower heat and simmer for about 25 minutes to make clear chicken soup. 3. Remove chicken thigh from the soup and separate the meat from the bone. Use hands or thongs to peel the meat into strips for tastier chews. 4. While cooking chicken soup, boil about 5 cups of water in another pot. Pour macaroni into the boiling water and cook for about 20 minutes until they are enlarged and softened (see tip a). 5. Use a strainer to scoop the cooked macaroni into a big bowl of cold water before scooping them into the pot of hot chicken soup. (Why rinse cooked macaroni in cold water? See tip b.) 6. Add fish balls and prawns to the pot and bring all to boil. (When are they cooked? See tip c.) 7. Taste soup and add light soy sauce to taste, if necessary. Turn off the fire soon after to prevent overcooking the prawns as they will become harder. 8. Scoop macaroni soup and ingredients into bowls and top with chicken strips. Garnish with Chinese parsley and serve.
Cooking Tips:
a. To test softness of macaroni, use a metal fork and try to cut a few pieces. If they can be cut easily, they are soft enough. b. Rinsing cooked macaroni in cold water will make them chewier and less sticky. You can also put them in a metal sieve and rinse under clean running tap water. c. The fish balls are cooked when they float to the top of the soup. The prawns are cooked when they curl up and turn pink.
